Shorting stable coins: Least risky options...

I'm looking to short a basket of USD pegged coins with a planned hold of several years if necessary. However, all options look like they carry significant CEX counter-party risk.

Defi options look like they would be vulnerable to flash spike forced liquidations, not to mention L2 risk.

If you're shorting stable coins, how are you doing it?

Have you found viable ways to short without using CEX? Have you found ways to hedge a single tick flash spike attack?
